Ho Ho Holiday Energy Bites (Gluten Free)

Ingredients

  • 2 cups old-fashioned oats, uncooked
  • 1 cup shredded unsweetened coconut, plus a little extra for rolling
  • 1 cup dried cranberries
  • 1 cup raw unsalted pumpkin seeds
  • 1 cup cacao nibs or chocolate chips
  • 1/2 cup ground flax seeds
  • 2 tablespoons chia seeds
  • 1 cup almond butter, oil drained off
  • 1 cup maple syrup
  • 2 tablespoons vanilla bean paste

Instructions

Add all of the energy bite ingredients into a large mixing bowl. Use a wooden spoon to mix until well combined. The mixture needs to be wet enough to stick together.

Scoop out a heaping tablespoon one at a time and roll into firm bite size balls.

If your mixture is sticky, add more oats. If it is too dry to stick, add more maple syrup. 

Give each ball a roll in the extra coconut and place on prepared sheet.

Place in an airtight container to store for up to 5 days or in the refrigerator for up to one month.
