Masters Peach Ice Cream Sandwich Recipe

Ingredients

This sugar cookie recipe has the perfect texture for an ice cream sandwich.

  • 3/4 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1/2 cup light brown sugar
  • 1/4 cup corn syrup, clear
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour, sifted
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Peach Ice Cream

  • 1 gallon of homemade, semi- homemade, or store bought peach ice cream (See below instructions for options.

The Masters Peach Ice Cream Sandwich Instructions

The Sugar Cookies

It is certainly an option to choose a store bought sugar cookie. Make sure it is a chewy and soft cookie.

  1. Preheat oven to 375°F.
  2. Line two baking sheets with parchment paper.
  3. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a small bowl. Set aside.
  4. Add the butter, brown sugar, sugar, corn syrup, vanilla, and egg in a large mixing bowl and beat with an electric mixer on high speed until fluffy.
  5. Next, add the dry mixture into the Sugar Cookie mixture and beat at medium speed until combined.

Note: It is important to form your sugar cookie dough all the same size so that the top and bottom cookies are uniform. I highly recommend using a cookie scoop and leveling it for each cookie.

  1. Using a 1 1/2 inch cookie scoop, form even sized dough balls and place them two inches apart on the prepared baking sheets. Press with the flat bottom of a glass to a 1/4″ thickness.
  2. Bake the sugar cookies for 10 to 12 minutes or until the cookies are just golden brown.
  3. Cool on a baking rack.

PEACH ICE CREAM OPTIONS AND ASSEMBLY METHODS

    Store Bought Peach Ice Cream

    • I picked this option for this recipe and used Tillamook Peaches and Cream. I love the creaminess, the chunks of peaches, and the lovely light peach color.
    • When choosing a store bought ice cream, consider the creaminess. The creamier the better. Avoid unnatural peach flavorings. They will give the Peach Ice Cream Sandwiches a bitter aftertaste.

    • We love ice cream and this round scoop is favorite kitchen tool when making ice cream sandwiches and sundays.
    • Prepare a large surface with wax or parchment paper.
    • Place a small baking sheet or a plate in the freezer.
    • Press the ice cream circle scoop into the ice cream, give it a turn, pull upward, and press to place peach ice cream on the bottom side of a sugar cookie. Add a second cookie to make a cookie sandwich.
    • Place on the plate or baking sheet in the freezer.
    • Repeat steps 2 – 5 for the rest of the cookies.
    • When the cookies are frozen, wrap in plastic wrap or use my below wrapping idea for a party. Place back in the freezer until ready to serve.

    Sharp Knife Method

    • Prepare a large surface with wax or parchment paper.
    • Place a small baking sheet or a plate in the freezer.
    • Using a sharp knife, turn the ice cream container on its side and slice 3/4 inch thick slices.
    • Place the slices on the prepared surface.
    • Use a cookie cutter that will fit your sugar cookie to cut out peach ice cream circles. Next, place the ice cream slice on the bottom side up sugar cookie. Add a second cookie to make a cookie sandwich.
    • Place on the plate or baking sheet in the freezer.
    • Repeat steps 2 – 5 for the rest of the cookies.
    • When the cookies are frozen, wrap in plastic wrap or use my below wrapping idea for a party. Place back in the freezer until ready to serve.

    Semi Homemade Peach Ice Cream

      Ingredients

      • 1 gallon peach ice cream or vanilla ice cream softened.
      • 18 ounces frozen peaches
      • 1/2 cup whipping cream

      Instructions

      • Line a quarter sheet baking pan with wax paper. Set aside.
      • Add the ice cream, frozen peaches, and whipping cream into a blender and pulse to combine. Avoid making a milkshake! Just a few pulses to combine.
      • Pour the blended peach ice cream onto the prepared baking sheet and level with a spatula.
      • Lightly cover with a sheer of wax paper and freeze for 3 to 6 hours.
      • Choose a circular cutter to match the size of the sugar cookies.
      • Fill a bowl with warm water and set aside.
      • Dip the cookie cutter in the warm water and then press it firmly straight down into the sheet of frozen peach ice cream touching the pan. Place your free hand underneath the parchment and press a little to help for a clean cut.
      • Using a spoon, slide the circle of peach ice cream on the a bottom side up sugar cookie. Place another cookie on top.
      • Place the finished Masters Peach Ice Cream Sandwich on the prepared pan in the freezer.
      • Repeat steps 2 – 5 for the rest of the cookies.
      • When frozen wrap with the below wrapping method for a party or in plastic wrap
