Ho Ho Holiday Energy Bites! Yummy no-bake bites of awesome are the perfect thing to give you a little extra boost of energy when your inner Rudolph Vibe needs a little kick in the biscuits.

Ingredients
  

  • 2 cups old-fashioned oats uncooked
  • 1 cup shredded unsweetened coconut plus a little extra for rolling
  • 1 cup dried cranberries
  • 1 cup pumpkin seeds raw and unsalted
  • 1 cup cacao nibs, or chocolate chips
  • 1/2 cup ground flax seed
  • 2 tablespoons chia seeds
  • 1 cup almond butter oil drained off
  • 1 cup maple syrup
  • 2 tablespoons vanilla bean paste

Instructions
 

  • Add all of the ingredients into a large mixing bowl. Use a wooden spoon to mix until well combined. The mixture needs to be wet enough to stick together.
  • Scoop out a heaping tablespoon one at a time and roll into firm balls.
  • If your mixture is sticky, add more oats. If it is too dry to stick, add more maple syrup.
  • Give each ball a roll in the extra coconut and place on prepared sheet.
  • Place in an airtight container to store for up to 5 days or 10 days in the refrigerator.
