Ho Ho Holiday Energy Bites! Yummy no-bake bites of awesome are the perfect thing to give you a little extra boost of energy when your inner Rudolph Vibe needs a little kick in the biscuits.
1cupshredded unsweetened coconutplus a little extra for rolling
1cupdried cranberries
1cuppumpkin seedsraw and unsalted
1cupcacao nibs, or chocolate chips
1/2cupground flax seed
2tablespoonschia seeds
1cupalmond butteroil drained off
1cupmaple syrup
2tablespoonsvanilla bean paste
Instructions
Add all of the ingredients into a large mixing bowl. Use a wooden spoon to mix until well combined. The mixture needs to be wet enough to stick together.
Scoop out a heaping tablespoon one at a time and roll into firm balls.
If your mixture is sticky, add more oats. If it is too dry to stick, add more maple syrup.
Give each ball a roll in the extra coconut and place on prepared sheet.
Place in an airtight container to store for up to 5 days or 10 days in the refrigerator.
