My husband brought home a bag of coconut clusters from Costco last weekend. He ate the entire bag leaving one small piece. I found this note on the counter with that last tiny bite.

Babe, this stuff was delicious. Eat this bite and make me more.  Bless his heart!

I am not sure I have replicated the Costco version, but here is what I came up with after dissecting the small piece he left me. I am certain this is a healthier version and I must say it is GOOD STUFF!

If you are a coconut lover or have one in your life, this  recipe is a winner.

Coconut Cluster Bark

A delicious snack for any occasion.

Ingredients
  

  • cups coconut flakes
  • 1 cup sliced almonds or pistachios
  • ¾ cup pumpkin seeds
  • ¼ cup chia seeds
  • 3/4 cup honey

Instructions
 

  • Pre-heat oven to 200° F.
  • Place all ingredients into a mixing bowl and gently toss until everything is lightly coated with the honey.
  • Pour the mixture out onto a parchment lined baking sheet and gently press out into a flat 1/4″ thick sheet.
  • Bake for 1 hour or until the bark has slightly hardened. This may vary depending on your oven.
  • Remove from oven and cool completely.
  • Break into bite size pieces.
