Spooky and Tasty Black Sparkle Cat Carrot Cake Cookies

Ingredients

Carrot Cake Cookies

  • 1 Moist Carrot Cake Boxed Mix
  • 2/3 cup flour
  • 2 eggs
  • 1/3 cup coconut oil, melted
  • 1/4 cup sour cream
  • 1/2 cup brown or white sugar

Cream Cheese Frosting

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, unsalted and softened
  • 1 1/2 cup powdered sugar
  • 1 teaspoon vanilla

Black Sparkle Cat Carrot Cake Cookies Instructions

Carrot Cake Cookies

Preheat oven to 350° F.

Line a baking sheet with parchment paper.

Add the carrot cake mix, flour, eggs, coconut oil (melted and cooled, sour cream, and vanilla to a mixing bowl. Mix on medium speed until just combined. Avoid over-mixing. The dough will be thick and sticky.

Using a large spoon, drop dollops of the dough onto the prepared baking sheet. Dip the bottom of a glass into the powdered sugar and press the dough down to just about 1/4 inches in thickness.

Make the cream cheese frosting. (Recipe below.)

Bake for 10 to 12 minutes or just until the bottoms are golden brown. Cool on a wire rack.

Frost the carrot cake cookies generously with cream cheese frosting, shake on the sprinkles, and top with a black sparkle cat.

In a mixing bowl, add the cream cheese, butter, powdered sugar, and vanilla into a mixing bowl. Mix on medium speed until smooth.
