Apple Cider Breakfast Cake Recipe

Ingredients

  • 2 medium apples, cored and sliced into thin wedges
  • 1 3/4 cups sugar
  • 3/4 cup vegetable oil
  • 1/4 cup apple cider
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1-1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 3 tablespoons brown sugar
  • powdered sugar for dusting

Instructions

In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Stir in the apple cider.

Combine the flour, baking powder, salt, cinnamon and baking soda and then gradually beat into sugar mixture until blended.

Transfer into a lightly greased baking dish. Insert the apple slices across the top of the batter leaving the skins showing. 

Using a fork, combine the brown sugar and the cinnamon together and generously sprinkle the top of the unbaked batter. 

Bake 35 minutes or until knife comes out clean. Cool on a wire rack. Dust with powdered sugar. Slice and enjoy.
