Ingredients
  

  • 2 medium apples cored and sliced into thin wedges
  • 1 3/4 cups sugar
  • 3/4 cup vegetable oil
  • 1/4 cup apple cider
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1-1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 3 tablespoons brown sugar
  • powdered sugar for dusting

Instructions
 

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Stir in the apple cider.
  • Combine the flour, baking powder, salt, cinnamon and baking soda and then gradually beat into sugar mixture until blended.
  • Transfer into a lightly greased baking dish. Insert the apple slices across the top of the batter leaving the skins showing.
  • Using a fork, combine the brown sugar and the cinnamon together and generously sprinkle the top of the unbaked batter.
  • Bake 35 minutes or until knife comes out clean. Cool on a wire rack. Dust with powdered sugar. Slice and enjoy.
