Prepare the Green Peas For The Pasta Salad If you are using frozen peas, follow package instructions using the below ice bath to stop cooking when done.
Add ice into a mixing bowl and cover with fresh water.
Bring a small saucepan of water to a rolling boil. Drop the heat to medium low.
Drop in the green peas and boil for exactly 3 minutes.
Quickly and carefully drain the peas and add them to the ice bath to stop the cooking.
Drain the water from the peas.
Set aside.
Make the Lemon Basil Dressing Add the lemon juice, lemon zest, basil olive oil, salt and pepper to a small bowl and whisk to combine.
Set aside.
Assemble The Lemon Basil Pasta Salad Add the green peas and parmesan cheese into the bowl of prepared pasta.
Drizzle the lemon basil dressing over the salad and toss.
Garnish with fresh lemon slice and basil.
This pasta salad is best with a flat pasta versus a tubed pasta.
Be careful not to over cook the farfalle pasta to avoid a floppy texture. The dressing will add a bit of extra moisture.
