Ingredients

  • 1/2 stick unsalted butter
  • 1 cup self-rising flour
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 1/2 cups fresh sour or sweet cherries washed and pitted (Substitute with a can of cherry pie filling or canned cherries.)
  • optional: 1/2 cup sanding sugar

Instructions

  • Preheat oven to 350° F.
  • Place the unsalted butter in a cast iron skillet and melt over medium heat. Turn the heat off the very minute it is melted. (If you are using a baking dish, melt the butter in the dish while the oven heats.)
  • Add the sugar, self-rising flour, and cold milk in a medium mixing bowl. Stir until just combined.
  • Note: Just about 20 strokes will do it. Lumps are okay. Be careful not to over work the mixture.
  • Pour the mixture over the hot butter.
  • Sprinkle or spoon the fresh cherries, canned cherries, or cherry pie filling over the mixture.
  • Bake for 45 minutes.

Notes

This recipe works with many different fruits. Be sure to read the post for substitutions for cherries.
