Lightly spritz a sheet of parchment paper with nonstick cooking spray.
Insert a stick into the tops of the itty bitty apples.
Combine the water, corn syrup, and sugar in a medium saucepan over medium-high heat. Stir until the sugar dissolves.
When the mixture reaches 250° on a candy thermometer, stir in the red hot cinnamon candies until they dissolve. Continue to cook the candy until it reaches 302° and remove from the heat immediately.
Using the stick as a handle, quickly dip the itty bitty apples into the hot mixture and give it a twirl. Let the excess hot syrup drip back into pot and set it on the prepared parchment paper.
Work quickly repeating with the remaining apples.
Allow the Itty Bitty Red Hot Candied Apples to cool at room temperature.
Best enjoyed within 24 hours.
Notes
Set the apples on a mini muffin paper and wrapped them for party favors. They of course would be just lovely on a pretty silver tray.
