Ingredients
  

  • 2 cloves garlic minced
  • 1 onion diced
  • 8 ounces ground beef
  • 2 teaspoons chilli powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups chicken broth
  • 2 cups crushed tomatoes
  • 16 ounces red kidney beans one can drained and rinsed
  • 2 cups elbow macaroni
  • 8 ounces cream cheese
  • 1/2 cup evaporated milk
  • 1 cup sharp cheddar cheese extra for garnishing
  • 2 scallions thinly sliced

Instructions
 

  • Heat the olive oil in a large skillet or 4 quart dutch oven over medium high heat. Add the garlic, onion, and ground beef. Cook until browned. Drain the excess fat.
  • Stir in the chicken broth, tomatoes, beans, chili powder, cumin, salt, and pepper. Bring to a simmer and stir in the pasta. Bring to a boil. Next, reduce heat back to a simmer for 15 minutes or until pasta is cooked.
  • Stir in the milk, cream cheese, and cheddar cheese until melted.
  • Ladle into bowls and top with scallions and shredded cheddar.
