Ingredients
  

Cake

  • 1 1/4 cup all-purpose flour or cake flour
  • 2/3 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup olive oil
  • 1/2 cup greek yogurt
  • 2 large eggs room temperature
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Roasted Grapes
  • 3 cups grapes rinsed and dry

Greed Yogurt Glaze

  • 4 tablespoons greek yogurt
  • 1 cup powdered sugar

Instructions
 

  • Cake
  • Preheat oven to 350° F. Grease a 9" cake pan
  • Add the all-purpose flour, sugar, baking powder, baking soda, and salt into a mixing bowl and whisk to combine. Create a well in the center. Add the olive oil, eggs, and yogurt. Stir to combine. Add the lemon juice and lemon zest. Stir until there is no lumps. 
  • Pour into the prepared pan and bake 30 to 35 minutes. 
  • Remove from the oven, coll for 
  • Roasted Grapes 
  • Preheat oven to 400°F. Line a baking pan with parchment. 
  • Scatter the grapes on the prepared pan and drizzle with olive oil. 
  • Greek Yogurt Icing 
  • Add the yogurt and powdered sugar into a mixing bowl and mix until smooth.
