Ingredients
  

  • 48 Tater Tots thawed (32 ounce bag)
  • 1 cup sharp cheddar cheese I used Cabot Seriously Sharp White Cheddar
  • 2 apples diced
  • 3 prosciutto slices or 4 bacon slices fried crispy and crumbled
  • 3/4 cup sour cream or plain Greek yogurt
  • chives chopped
  • sea salt and black pepper

Instructions
 

  • Preheat oven to 350° F.
  • Place a 24 cup mini muffin pan in the oven and heat for 15 minutes. Remove and spray with cooking spray.
  • Place 2 tater tots in each well of the mini muffin pan and let them thaw completely. Add a tiny bit of shredded apple in the bottom of each well. Use clean hands to smash the tater tots creating a well/cup. Sprinkle on the shredded cheddar cheese. If you are using prosciutto add it now.
  • Bake for 15 minutes or until golden brown.
  • Remove from the oven and let them sit for 3 minutes. Next, remove from the pan onto a platter placing them in mini muffin cups.
  • Top with a dollop of sour cream or greek yogurt. Sprinkle crumbled bacon (if using), chives, black pepper, and sea salt.
  • Serve warm or at room temperature.
