Don’t you just love to eat pretty food? I surely do! Something about eating pretty colors makes it taste better.

Today I am sharing my latest  “go to” breakfast creation treat with you. A crunchy and colorful Rainbow and Lemon Ricotta Radish Toast. DELICIOUS!

Rainbow Radish & Lemon Ricotta Toast

Ingredients

radishes, cleaned and sliced thin
a favorite fresh sliced bread, toasted
micro greens
ricotta cheese
1 tablespoon lemon juice
olive oil
lemon zest

Instructions

1. Spread ricotta cheese on each piece of toast.
2. Add a layer of radishes.
3. Sprinkle with micro-greens, lemon zest, and fresh dill weed.
4. Drizzle with olive oil and lemon juice.
5. Give the Radish Toast a dash of salt and pepper.
