Instructions
Add the sharp cheddar cheese, Monterey Jack cheese, cream cheese, drained pimentos, mayonnaise, onion and garlic powders, cayenne pepper, salt and pepper into a mixing bowl. Stir until well combined.
Generously spread the Masters Pimento Cheese to 6 slices of the soft white bread. Top each with a second slice of bread. Cut diagonally. If you are making the pimento cheese ahead of time (See storage information below. , spread on the pimento cheese before serving to avoid sandwiches.
Serve sliced into halves on a pretty silver platter or tray.

Avoid using low fat cheeses. The texture and flavor will be lacking.
Be sure to use softened cream cheese.
Use a soft white bread. It is the magic.
I don't recommend a hand mixer for this Masters Pimento Cheese. Again, make sure the cream cheese is softened and stir with a large rubber spatula pressing down as you combine.
