Ingredients
  

CARROT CAKE DONUTS

  • 1 yellow cake mix
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ginger freshly minced
  • 1/2 teaspoon vanilla bean paste
  • 1 cup water
  • 1/2 cup coconut oil
  • 3 eggs
  • 3/4 cups shredded carrots

ICING

  • 8 ounce package cream cheese
  • 1 1/2 cups powdered sugar
  • cream

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare the donut pans by spraying with coconut oil.
  • In a mixing bowl, add the yellow cake mix, cinnamon, nutmeg, ginger, vanilla bean paste, water, oil, and the eggs. Mix until combined. Stir in the shredded carrots.
  • Carefully spoon into the prepared donut pans filling each shape a little more than half way.
  • Bake for 10 to 14 minutes. Remove from oven. Cool on a baking rack.
  • Combine the cream cheese, powdered sugar, cream (...a little at a time until it is almost a glaze), and 3 drops of white food coloring in a small bowl until smooth.
  • Generously ice the donuts.
  • Place two bunny feet and a cotton tail on each bunny.
