Ingredients
  

  • 1 cup water lukewarm water
  • 1 tablespoon sugar or honey
  • 1 tablespoon dry yeast
  • 4 tablespoons olive oil
  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 2 tablespoons fresh rosemary or thyme optional
  • 1 sprig fresh thyme to garnish

Instructions
 

  • In a large bowl, give the water or honey, sugar, and yeast a stir and let it bloom for 5 minutes.
  • Add in the AP flour, salt, 1 tablespoon thyme, and oil. Mix the dough together with a large spoon. Avoid over-mixing.
  • Note: The dough will be sticky. Avoid adding more flour.
  • Grease a large mixing bowl and gently roll your yeast dough inside. Cover with plastic and let it rise for 1 hour.
  • Preheat the oven to 400°F.
  • Grease a cast iron skillet with olive oil. Using a rubber spatula, roll the risen dough into the greased skillet. Sprinkle with flaked salt and 1 tablespoon thyme. Press a thyme sprig on top.
  • Bake for 20 minutes until the loaf is golden brown. Cooking time will vary depending on how big your skillet is.
  • Serve this warm with butter!
