In a medium bowl, stir together flour, baking powder, sugar, salt, and baking soda. Using your fingertips, snap the cold butter into flour mixture until crumbly.
Add the buttermilk, cheese, and chopped apples, stirring just until combined.
Roll out the dough to 1/4 inch thick circle. Cut out biscuits using a circular biscuit cutter. Place on a parchment lined baking sheet.
