Zucchini Sushi! A new way to eat your veggies. How cute are these little bites of springtime? …AND THEY ARE EASY PEASY TO MAKE!

Zucchini Suchi

Tonight I used the veggies I had in the fridge. Get creative! Try adding carrots, celery, radishes, crab meat, or even green apples. 

…Or how about bacon. It gives them a salty twist.

MAN VS. BACON WARNING!

When I add bacon to these, my husband eats them as fast as I can roll them. Smile.

Ingredients

1 medium zucchini
3 ounces cream cheese, softened
3 ounces goat cheese, softened
1 tablespoon lemon zest
2 tablespoons lemon juice
3 sweet rainbow peppers, cut into thin slices
1/2 avocado, cut into slices
1/2 cucumber, cut into slices
a pinch of salt and pepper
sesame seeds (optional)

Directions

In a small bowl, combine the cream cheese, the goat cheese, the lemon zest, the lemon juice and a pinch of salt and pepper. Mix until smooth. Using a vegetable peeler, slice the zucchini into thin flat strips. On a cutting mat, place the zucchini slices vertically. Spread a thin layer of the lemon cheese spread  on top of zucchini. At the bottom end of the zucchini, place a few slices of the rainbow peppers, the cucumbers slices, and the avocados slices. Carefully roll each zucchini slice.

Zucchini Sushi

Repeat with the remaining ingredients. Place them on a pretty platter.
