Zesty Chicken, Kale, and Quinoa Salad
1 1/2 cups Rainbow Quinoa
2 cups fresh kale, washed and chopped
2 grilled or baked chicken breasts, shredded
3 colored sweet peppers, washed and julienned
1/2 cup pine nuts, toasted
Cook the quinoa according to the package directions. When the quinoa is cooked, remove it from the heat and toss in the kale. Pour into a bowl. Toss in the chicken, peppers, and pine nuts. Zest them lemons over the salad then squeeze the juice in. Toss gently. Keep in the refrigerator until ready to serve. Leftovers can be stored for two days.
