Strawberry Waffle Cookies are a unique spin on the average cookie. Light and airy, covered in a cream cheese glaze, garnished with sprinkles, and topped with a “poof” of Reddi-Wip. MMM!

Strawberry Waffle Cookies
Ingredients and Dough Directions:
1 box strawberry cake mix
1/2 cup butter, unsalted and softened
Heat a waffle iron to medium-high heat.
In a mixing bowl, add the strawberry cake mix, the butter, and the eggs. Mix well. The dough will turn into a thick consistency.
With clean hands, roll the dough into 1 1/2 inch dough balls.
Spray they waffle iron with cooking spray.
Place the rolled dough balls on the waffle iron and close the lid pressing gently. Cook 2 to 3 minutes.
Remove the Strawberry Waffle Cookies from the waffle iron and place them on a cooling rack.
Repeat the process spraying the waffle iron after removing each batch.
Makes 30 Cookies
Cream Cheese Glaze:
4 ounces cream cheese, softened
1 1/2 cups powdered sugar
1/4 cup milk
Reddi-wip to garnish
In a mixing bowl, beat together the cream cheese and powdered sugar until smooth. Slowly add the milk until you achieve a glaze consistency. You may not need all of the milk.
Dip the tops of each Strawberry Waffle Cookie into the cream cheese glaze and return them to the cooling rack.
Decorate with sprinkles.
Give the Strawberry Waffle Cookies a “poof” of Reddi-wip just before serving.
These cookies are best served the same day.
