Tonight I am serving Oven Frites & Nordstrom Kalamata Olive Aioli Dip. Sometimes a girl needs fries with dinner.
Living in the PNW, it is impossible not to visit the original Nordstrom in downtown Seattle and have lunch in Café Nordstrom. One of my favorite things on the menu is the Nordstrom Aioli Olive Dip they serve with their shoestring fries. The waitress shared that the Nordstrom family chef brought this recipe to the Café. If this is a true fact, I would like to give this chef a round of applause. It is delicious!
I am sharing the recipe below from the Nordstrom Thread. You will find the link at the bottom of this post. Give this a try. It is a show-stopper in our house. If you are ever visiting a Nordstrom, consider having lunch in their Café.
PS Here is another shout out for Nordstrom’s. Living in Atlanta before marriage, I found the most beautiful wedding shoes I had ever seen in a fashion magazine. They were nowhere to be found in the city. Living only a few blocks from a Nordstrom, I decided to put their customer service claim to the test. I had the shoes within two days. AND!!! They were delivered to my door. How about that for five star service?! I am a fan.
Army Wife Tip: If your soldier loves to bring folks home for lunch, these frites make any sandwich a super star.
2 large russet potatoes, scrubbed and rinsed
1/3 cup extra virgin olive oil
1 teaspoon pink salt
2 tablespoons black pepper
2 tablespoons parsley, dried
1/4 cup Parmesan cheese
Preheat oven to 400 degrees F.
Place a parchment lined heavy-duty baking sheet into the oven while preheating. A hot pan will keep your potatoes from sticking.
Cut the prepared potatoes in half lengthwise. Then cut the potatoes into 1/2” thick strips. Place the potato strips into a medium bowl. Add the olive oil, salt, and pepper and toss the potatoes coating them completely.
Carefully remove the hot heavy-duty baking sheet from the oven. Place the prepared potatoes on the baking sheet in a single layer and return the baking sheet to the oven until they are golden brown on the bottom. Turn the potatoes over and cook another 15 minutes. Serve hot.
*Optional: Sprinkle the hot potatoes with parsley and parmesan cheese.
Nordstrom Kalamata Olive Aioli Dip
*I only messed with perfection a tiny bit. I simply cut the recipe in half. This makes one cup.
1 small clove garlic, finely minced
1/4 cup mixed olives, pitted
1 tablespoon roasted garlic
1 cup mayonnaise
1 tablespoon lemon juice, freshly squeezed
1/4 teaspoon kosher salt
Using a food processor fitted with a metal blade, process the garlic, olives and roasted garlic, pulsing until finely chopped. Add the mayonnaise and lemon juice and process until the mixture is well blended and light purple. Transfer to a serving dish, cover and refrigerate.
